Salmon Sweet Potato Cakes

SERVES 10-12

Ingredients

Salmon sweet potato cake ingredients including fresh salmon, cubed sweet potatoes, rolled oats, eggs, Dijon mustard, dill, lemon, green onions, and seasonings before preparation.
  • 2 pounds salmon fillet, cooked and flaked
  • 2 medium sweet potatoes, cooked and mashed
  • 2 eggs
  • 1 cup oats
  • 1/2 lemon, juiced
  • 2 green onions, diced
  • 2 tbsp Dijon mustard
  • 1 tbsp fresh dill
  • 1 tsp garlic powder
  • 1 tsp cajun seasoning
  • 1 tsp parsley
  • 1 tsp salt
  • ½ tsp black pepper

Directions

  1. Preheat the oven to 400°F degrees.
  2. Bring a pot of water to a boil, add the cubed sweet potatoes, and let them boil while you prepare the salmon, check with a fork for tenderness. Drain. Use fork to mash until smooth in pot.
  3. Season the salmon fillets with salt and pepper, place in oven on greased baking sheet for 12 minutes until mostly cooked through.   4. Combine sweet potato mash, flaked salmon and all other ingredients in a large bowl.
  5. Form into 10-12 patties.

  7. Bake at 400°F for 25 minutes, flipping halfway through. You want to see browning when you flip it. If not, leave it a bit longer.
  8. Allow patties to cool completely.
